in a warm and relaxed mountain atmosphere, our restaurant and its terraces welcome hikers, bikers, skiers and nature lovers throughout the day. in the evening, chetzeron is transformed and then receives guests in the calm and elegance of epicureans who wish to live a moment out of time and guests of the hotel. it is therefore in two different atmospheres that our dishes can be enjoyed.
entirely home-made, the cuisine we offer is inspired by traditional Alpine recipes and is enhanced with contemporary notes. worked exclusively with regional and seasonal products, our menu evolves over the months. on summer days, you can taste our grilled meats in the feuerring. in autumn, the traditional hunting invites itself on our menu and in winter, it is the turn of the veloutés and greedy pasta dishes to make their appearance.
it is important to us to honour the Valaisan terroir and to make our guests discover its nuggets. moreover, product quality, respect for nature and the proximity of the farms are essential to us. our products therefore come directly from the farmers, breeders and winegrowers of the region. we will choose our fruits and vegetables from the Roduit family in fully, we order our cheese at the laiterie le terroir in crans-montana and the ferme des trontières in randogne, where our meat comes from the boucherie du rawylin crans-montana and from the boucherie la lienne in lens and we go to get our eggs from Mrs Mayor from Icogne. we therefore favour the local in order to guarantee the quality and freshness of the food while respecting the environment.
the wines we offer are carefully selected by Françoise Lamaa, sister of Sami Lamaa. his skills in sommellerie and oenology, which he has been exercising for some twenty years in contact with the most talented professionals in the field, as well as through his attendance at various wine schools and continuing education courses, enable us to benefit from his advice. our selection contains mainly Swiss wines, but also offers the possibility to discover French, Italian, Lebanese and Israeli wines.
the slow food movement
through our choices, our small gestures and our philosophy, we adhere to and support the slow food movement. slow food, it is a worldwide movement present in 160 countries and which « calls for sustainable and environmentally friendly food production ». this movement promotes local food, raises public awareness about the quality and taste of food, and « denounces the impact of our daily food choices on production methods and, consequently, on our ecosystems ».
concretely, at chetzeron, we work exclusively with local and seasonal products, we choose the food ourselves to ensure its quality and we favour small producers and breeders who respect nature and the animal. in addition, our internal organisation aims to avoid food waste as much as possible. thanks to the small size of our menu and our breakfast formula, waste is reduced and you will always enjoy fresh, home-made products.
